The challenge for the week of Sept. 14-20 chosen by healthydelicious is all about LUNCH! This is the meal where things often go awry when we're trying to eat more healthfully. The winner of this week's challenge will receive a copy of the Flat Belly Diet Cookbook written by editors of Prevention magazine, Liz Vaccariello and Cynthia Sass. All of the recipes were carefully developed to make sure every meal includes just the right amount of monounsaturated fatty acids (MUFAs) and meets the plan's 400-calorie guideline, so readers can mix and match meals to suit their taste.
Okay - forget the title :-) What I love most about the cookbook is that the recipes are simple and easy to make or customize. (Submit your photos by 11:59 PM EST on Saturday September 19, 2009 for a chance to win).
I wouldn't mind having some Rice Paper Rolls like GuiltyKitchen with Bleu Cheese Salad, Falafel Croutons from ghweiss for my lunch this week.
