HealthyYum Weekly Challenge. Last week we challenged you to submit your favorite PUMPKIN recipe photos and wow! We got a lot of entries, so Maggie and I had a hard time choosing, but in the end we both agreed on Mac 'n Cheese Pumpkin posted by Acquired Taste because it was such a creative way to amp up a pretty standard meal.

New Challenge. This week's theme is APPLES. It's that time of year again when apples take over. What are you going to do with them - apple pie, apple cider, stuffed apples, applesauce, add it to salads? Is it going to be the star of the show or the extra oomph needed to spice up a recipe? Need inspiration? Check out the Mile High Apple Pie by GuiltyKitchen and Spicy Peanut Butter Cinnapple Raisin Chicken Salad by burp_excuzme.

Favorite Photos. bonvivant said: My favorites which were the Tiramisu with Pastry Cream and Cocoa and Ginger Mascarpone by Tania for stylishly presenting a delicate dessert (the piped topping was a winner for me). And the Mexican Baked Eggs by Kalyn's Kitchen. I have never heard of this dish, but the bright colors and simple presentation make me want to check out her recipe and eat the dish straightaway.

The Pumpkin Turtle Pie posted by yogiclarebear - it just looks and sounds amazing amd I am definitely going to try it! The Zucchini, mushroom, and kidney bean quesadilla posted by Eat This also had me at hello! Quesadillas are a big brakfast food here in Mexico and this sounds like a delicious variation.

Websites & Blogs We Heart. Foods of April said: Two of my favorite blogs are Lighter Portions (http://lighterportions.wordpress.com/) and Healthy Hott Housewife (http://healthyhotthousewife.blogspot.com). I love reading Lighter Portions because she comes up with the neatest and healthiest combinations- whether it be salads or yogurt mixes. I love reading the Healthy, Hott, Housewife blog because she strives to eat "clean" or unprocessed, wholesome foods, and she gives great workout ideas! My blog (www.foodsofapril.com) is a healthy living blog that focuses on healthy recipes, easy meal ideas, and workouts. I list my daily eats as well as workouts- I try to show people how easy it can be to live a healthy lifestyle!

Here are a few of my favorite food resources:

  • StillTasty.com - Your Ultimate Shelf Life Guide.
  • Wegmans.com - It's the website for the grocery chain, but more importantly it has a vast database of food products complete with nutrition facts & ingredients list.
  • Iateapie.net - Reviews of food products with diet & nutritional claims (including ingredients). Plus it's my own site :-)
  • MyGroceryDeals.com - Has copies of all the grocery circulars. Search by your zip code and then see which supermarket has the best specials going on.

And some of Maggie's:

  • Safeway.com - Recipes, tips, and dinnertime inspiration.
  • HealthyLivingMarket.com Recipes section. It's a natural foods store in Burlington, VT, and they put up great ideas for meals. You can browse by a bunch of different categories.
  • Care2.com - Green & healthy living section. News, info, ideas.
